Healthy No Bake Cocoa and Coconut Balls (Vegan)

  • 300g pitted dates
  • x4 heaped tbsp cocoa powder 
  • x2 tsp vanilla extract (not essence)
  • x1 tsp ground cinnamon
  • 80g hazelnuts 
  • x2 tbsp desiccated coconut






Utensils:

  • bowl
  • blender/food processor or a potato masher
  • knife 
  • spoon
  • chopping board
  • hammer (optional ) - lol joke, if you watched my snapchat story you will see why ha!





Method:

  1. Soften dates in a bowl of warn water for 20mins
  2. Drain and chop dates into smaller pieces. Add dates, x2 heaped tbsp cocoa powder, x2 tsp vanilla extract, x1 tsp ground cinnamon and 80g hazelnuts to a food processor. Blend together until a sticky dough forms. It is possible to use a potato masher or fork also. Roll into small truffle sized balls using the palms of your hands.
  3. Place 2 tbsp of both coconut and cocoa powder into separate bowls. Roll half the balls in coconut and the other half in cocoa powder.
  4. Place the balls in an air tight container and out in the fridge. Keep for up to four days.
