Hi Lovelies,

This has got to be the most requested recipe EVER from you all! I only made a batch two days ago over on snapchat and the messages on Facebook and Snap have been flying in. You all want to make the healthy mars bars and I don't blame you, they are amazeballs. The best thing is they only take 10 mins to make before throwing into the freezer for a while before enjoying the goodness!

Ingredients: (Makes approx 8 bars) I suggest doubling the ingredients to make 16 bars

Base

  • 1 cup of grounded almonds 
  • 2 tbsp melted coconut oil (I keep mine in the fridge, so I place in a pot of hot water to soften. I suggest just taking your oil out of the fridge the night before to make things easier)
  • 2 tbsp agave (alternatively natural honey)
  • 1/2 tsp vanilla extract


Yummy caramel filling

  • 25 medjool dates (I recommend soaking these for a good 20 minutes in warm water first or overnight if you wish especially if you don't have a blender or a good one like me - it will make life a lot easier) 
  • 2 tbsp melted coconut oil    
  • 1 tbsp almond butter (alternatively any nut butter of choice) 
  • 1 tbsp almond milk (not compulsory) 


Chocolate Topping

  • 1 tbsp Agave (alternatively natural honey)
  • 2 tbsp melted coconut oil
  • 1 tbsp cacao powder


Method:

1. Blend or mix all the base ingredients together in a bowl (will be a very light crumby substance). Press flat into the bottom of a tray and put in the freezer whilst making the filling.

2. Blend the filling ingredients to make a sticky substance, alternatively mix in a bowl (you will just need to cut up the dates a bit first, should be super easy if you let them soak in warm water for a while. I find if I leave them soaking overnight on the counter top, they are so much easier and quicker to mash up). I sometimes add a sprinkle of pink himalayan salt to the mix to make a salted caramel filling (optional). You can also add any selection of nuts at this stage to make snickers bars. Sometimes I make two filling, I'll make half my batch snickers and half mars bars. Spread the filling on top of your base and place back in the freezer whilst preparing the topping (this just cuts down the setting time so you can enjoy them sooner).

3. Blend/mix the topping ingredients together and spread on top. This will harden quickly so spread fast. If you are like me and love chocolate, double up on the topping ingredients to make it double choc, or if you love dark chocolate, replace the topping completely with melted dark chocolate. Pop back in the freezer for a few minutes before slicing up into bars.

  3. oh my, this sounds so delicious and so easy to make! I've been looking for easy to make desserts to eat after dinners. something no hassle with ingredients we already have. I just need to get more dates!
